The original recipe is to serve 2. I tripled it so I'd have some to share & some to freeze. 2 teaspoon olive oil 1 garlic clove minced 1 can (14.5 oz) stewed tomatoes in juice 1/2 cup ditalini (or other short tube pasta) 5 oz frozen cauliflower 1 medium zucchini, quartered lengthwise & cut crosswise into 1/2 inch pieces. [I used carrots instead since I hate zucchini.] 1/4 teaspoon dried thyme [I didn't have this, but probably could have used some spice.] coarse salt & ground pepper
In a medium saucepan, heat oil over med. Add garlic & cook, stirring until you can smell it, 1 min. Add tomatoes with juice & 2 cups water; bring to a boil. Add pasta & boil for 5 min; stir in cauliflower, zucchini, and thyme. Season with S&P. Reduce heat; simmer 5 min or until veggies are tender. Serve.
Enjoy! It was great. I over-added the pasta (since I love pasta) and it was too much. I do suggest doubling OR tripling the recipe so you've got enough to save!
FYI: Just made my second GIANT batch! Had some for dinner, 1 serving to freeze for me, 2 servings to freeze for pregnant friend and about 4 more servings in the fridge for meals this week. It was MUCH better with more salt, pepper & I added the dried thyme. Also, sprinkle some Parmesan cheese on top for a little extra yummy.
